Senior Chef De Partie

Meliteh Recruiting is seeking a highly skilled and passionate Senior Chef De Partie to join our client’s team on a full-time basis in Malta.

The Senior Chef de Partie is a vital member of the culinary team, reporting to the Sous Chef and Head Chef. This position ensures that day-to-day à la carte operations run smoothly and that the food offerings meet the organization's high standards.

The Senior Chef de Partie supervises Commis Chefs in the absence of the Sous Chef and Head Chef, manages daily section activities, including menu development, inventory, and cost control, and contributes innovative ideas to enhance the food offerings.

Role Requirements:
  • Proven experience as a Chef de Partie or similar role in a high-standard kitchen
  • Strong understanding of various cooking methods, ingredients, equipment, and procedures
  • Excellent record of kitchen and staff management
  • Accuracy and speed in handling emergencies and providing solutions
  • Familiar with the industry’s best practices
  • Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
  • A BS degree in Culinary Science or a related certificate would be a plus
  • Right to live and work in the EU
Main Duties:
  • Assist the Sous Chef / Head Chef in managing section operations within budgeted guidelines while maintaining the highest standards
  • Ensure excellent levels of internal and external communication, proactively addressing customer needs and requirements
  • Foster a communicative and ownership-driven environment with a focus on motivation and teamwork
  • Maintain correct stock levels within section buffer stores, assist in analyzing stock and sales reports, and address any anomalies
  • Operate within efficient labor budgets, maintaining flexibility to meet demand effectively
  • Regularly review the product range to ensure key quality standards are maintained and stay informed about the latest food nutrition trends
  • Assist in planning and implementing new ideas and menu specifications each season, ensuring they fit within budget guidelines and established quality standards
  • Represent the department at Special Events or as required by organizational needs
  • Manage Health & Safety and Food Hygiene in tandem with the Sous Chef / Head Chef, ensuring strict compliance with legislation
  • Act on reports from external HACCP consultants and other similar auditors
  • Maintain a confident and mature approach, practicing tact and diplomacy
  • Perform other related duties, tasks, and responsibilities as determined by both the line manager and organizational needs, fostering an environment of openness, trust, and continuous feedback and performance coaching
