Group Executive Chef

Meliteh Recruiting, on behalf of our well-known client, is seeking a highly skilled Group Executive Chef to oversee and elevate culinary operations across multiple restaurants in Malta.

This position will ensure high standards of food quality, kitchen efficiency, and team leadership.

The role involves ingredient sourcing, cost management, and staff training, with a focus on delivering exceptional guest experiences in alignment with brand standards.

Role Requirements:
  • Proven experience as an Executive Chef or in a senior culinary role within a multi-unit hospitality environment
  • Experience managing diverse culinary teams across multiple restaurant concepts
  • Strong leadership with experience in recruiting, training, and developing culinary staff
  • In-depth understanding of cost management, inventory, budgeting, and P&L oversight
  • Excellent communication skills, with the ability to collaborate with various departments
  • Formal culinary qualification
  • Certifications in food safety, HACCP, or culinary arts are advantageous
  • Effective menu profitability and food cost management
  • High guest satisfaction and food quality ratings
  • Strong retention and development within kitchen teams
  • Legal right to live and work in the EU
Main Duties:
  • Implement the culinary vision in alignment with the Global Culinary Director's direction
  • Ensure quality, presentation, and consistency across all kitchens
  • Oversee food preparation, portion control, cost management, and quality
  • Manage food costs, monitor stock variances, and meet budget targets
  • Report on culinary performance, including waste reduction and revenue targets
  • Collaborate with Purchasing to secure high-quality ingredients while balancing cost-efficiency
  • Recruit, mentor, and develop Head Chefs and Sous Chefs
  • Implement and maintain training programs to ensure food safety, presentation, and technique standards
  • Conduct performance evaluations, appraisals, and bi-annual KPI assessments for kitchen management
  • Ensure compliance with health regulations, food safety standards, and company policies
  • Conduct regular kitchen inspections, focusing on cleanliness, safety, and HACCP procedures
  • Audit and monitor kitchen inventories to ensure efficiency and minimize waste
  • Collaborate with suppliers to secure consistent, high-quality ingredients
  • Oversee all culinary aspects to exceed guest expectations
  • Address guest feedback and ensure a cohesive dining experience with front-of-house teams
  • Manage all catering events, developing recipes, costings, and staffing for various events
  • Partner with marketing to promote new dishes and seasonal offerings
  • Collaborate with the Events Manager to design custom menus, and engage with senior management to align with the brand’s vision
